Cornmeal & Spice Crusted Scallops

Makes 4 servings (3 scallops each)

1 tbsp Yellow Cornmeal

2 tsp Ground Coriander

1⁄2 tsp Garlic Powder

1⁄2 tsp Onion Powder

1/8 tsp Salt

1/8 tsp Black Pepper

1 1⁄2 # Sea Scallops (large)

1 tbsp Olive Oil

2 tsp Butter

Combine the first 6 ingredeints in a shallow dish. Dredge both sides of scallop in

cornmeal mixture.

Heat oil and butter in a large skillet over medium high heat. Add scallops to pan, and

cook 3 minutes, carefully turn over, cook 1 minute more or until done.
